Spicy Sweet Potato & Coconut Soup

This soup is so yummy. I found it in Real Simple magazine's March 2005 issue and I've been making it since [recipe]. I skip the sesame oil drizzle and sometimes add shrimp during the final 5-minute simmer. It's a big hit served with a big fresh arugula & red-leaf salad and your best local crusty bread. Great dinner for guests with a latish arrival.  hands-on-time: 15 minutes | total time: 1 hour | 4 servings
